Prior to the 1930‘s, iceberg lettuce was known as Crisphead lettuce. At one time, this lettuce was transported from California by train, covered in ice to keep it fresh, thus receiving the nickname of iceberg lettuce. Even James Beard was a fan, stating, “… it adds good flavor and a wonderfully crisp texture to a salad.”
